Sweet & smokey BBQ sauce

Sweet & smokey BBQ sauce

Ingredients 

  • 3 tbs olive oil 
  • 2 cloves garlic crushed 
  • 16 tbs tomato ketchup 
  • 4 tbs cold water 
  • 4 tbs apple cider vinegar 
  • 4 tbs brown sugar 
  • 2 tsp paprika 
  • 1 tsp smoked paprika 
  • 2 tsp chilli powder 

 

Method 

  1. Heat the oil in a small saucepan. 

  2. Add the garlic and cook until softened. 

  3. Add all the remaining ingredients and cook for 5 minutes. 

  4. Reduce the heat and simmer for 15 minutes until thickened. 

  5. Baste the sauce onto your chosen meat or use as a dip.  

  Suitable for vegetarians.

Servings: 2 pizzas

Ingredients 

  • 2 x pizza bases 
  • 4 x tbsp of tomato sauce 
  • 100g mozzarella 
  • 100g gorgonzola 
  • 100g parmesan 
  • 100g goats cheese 

Method 

  1. Prepare the cheeses by slicing, dicing or grating. 

  2. Spread 2 x tbsp of pizza sauce evenly onto each base. 

  3. Sprinkle the four cheeses evenly on top. 

  4. Cook one at time in your Firepod for 4 minutes.

Pizza Frutti Di Mare

Pizza Frutti Di Mare

Servings: Makes 1 pizza 

Prep time: minutes 

Cooking time4 minutes 

Ingredients 

  • 1 pizza base 
  • 2 tbsp pizza sauce 
  • 1 tbsp olive oil 
  • 1 tsp minced garlic 
  • 100g calamari rings 
  • 6 king prawns, cleaned keeping the shell intact 
  • 6 mussels, cleaned 
  • 120g grated mozzarella 
  • Salt and pepper 
  • 1 tsp chopped thyme  

 Method 

  1. Roll out the pizza dough. 

  2. In a frying pan, heat the oil and add the garlic. 

  3. Fry for 3 minutes. Add the calamari and fry for a further 2 minutes. 

  4. Season to taste and set aside. 

  5. Spread the sauce over the pizza base and arrange the prawns and mussels on top. 

  6. Sprinkle with the mozzarella and thyme. 

  7. Cook in your Firepod for 4 minutes.

Spicy veggie burger

Spicy veggie burger

Serves: 6

Prep time: 10 minutes

Cooking time:10 minutes

Ingredients

2 x 400g cans kidney beans, drained and washed
100g breadcrumbs
2 tsp of chilli powder 
Small bunch of coriander stalks and leaves chopped
1 egg
200g fresh salsa
150ml natural yogurt
Juice of ½ lime
6 burger buns, avocado and sliced onion to serve


Method

  1. Heat up your Firepod griddle.

  2. Tip the beans into a bowl and crush with a masher.

  3. Add the breadcrumbs, chilli powder, coriander stalks an½ the leaves, egg and two tbsp salsa.

  4. Season well and mix together with a fork.

  5. Divide the mixture into 6 and shape into burgers.

  6. Place on the griddle and cook for about 5 minutes on both sides.

  7. While the burgers are cooking, mix the remaining coriander leaves with the yogurt, lime juice and some black pepper. Cut the buns in half and spread the bases with some of the yogurt mix. Then layer with the avocado, onion, burger, salsa and yogurt.

Pork & Pineapple Skewers

Pork & Pineapple Skewers

Servings: 4 

Prep time: 20 minutes 

Cooking time:10 minutes 

Ingredients 

  • 400gms pork fillet, cut into cubes 
  • 4 tbsp muscovado sugar 
  • 60ml cider vinegar 
  • 1 tbsp fish sauce 
  • Small tin of fresh pineapple, well drained 
  • 1 green pepper, cut into chunks 
  • 1 red onion, cut into wedges 
  • 10 cherry tomatoes 

Method 

  1. Heat the sugar and vinegar in a pan until the sugar melts. 

  2. Add the fish sauce and leave to cool. 

  3. Tip in the pork and coat thoroughly. 

  4. Assemble the ingredients onto the skewers and cook on the Firepod griddle for 4-5 mins on each side.
